  • 85 g Coconut Sugar (heaped 1/2 cup)
  • 220 g Oat Flour (roughly 2 cups)
  • 1/2 tsp Baking Soda
  • 1 tbsp Vanilla Extract
  • Optional: 50 g Dark Chocolate Chips (1/4 cup)

Instructions

  1. Preheat oven to 180℃ / 350℉ and line a baking sheet with parchment paper.
  2. Melt butter in a mixing bowl for about 30 seconds in the microwave.
  3. Add coconut sugar, water, and vanilla extract; whisk until smooth.
  4. Mix in oat flour, baking soda, and salt until combined.
  5. Fold in dark chocolate chips if using.
  6. Divide dough into nine portions, roll into balls, flatten slightly, and place on the baking sheet.
  7. Bake for about 10 minutes or until lightly golden; let cool before serving.
