  • 125 g thick yogurt
  • 120 g honey
  • 2 large eggs (or 1/2 cup soy yogurt for vegan)
  • 1 apple (grated or finely chopped)
  • 150 g almond flour
  • 1 tsp baking powder
  • 2 tbsp ground cinnamon (divided)
  • Sugar or sweetener for topping

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a loaf tin lined with parchment paper.
  2. In a bowl, whisk together yogurt, honey, eggs, and vanilla extract until smooth.
  3. In another bowl, combine almond flour, baking powder, and 1 tablespoon of ground cinnamon. Fold into the wet mixture along with the grated apple.
  4. Pour the batter into the prepared tin.
  5. For the topping, mix sugar (or sweetener) with remaining cinnamon and sprinkle over the batter.
  6. Bake for 30-35 minutes or until a skewer comes out clean.
  7. Cool completely before slicing and serving.
