  • 3-4 lbs organic chicken (skin removed)
  • 2-3 tbsp Jamaican Green Seasoning
  • 2 tbsp Jamaican curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 2 medium russet potatoes (peeled and cubed)
  • 2 medium carrots (peeled and chopped)
  • 3 garlic cloves (minced)
  • 1-3 scotch bonnet peppers (adjust for spice level)
  • Fresh thyme sprigs
  • 1 cup low-sodium organic chicken stock

Instructions

  1. Marinate chicken with Jamaican Green Seasoning, curry powder, sea salt, smoked paprika, and browning for at least 30 minutes.
  2. Heat olive oil in a large pot over medium heat and brown the chicken pieces.
  3. Add garlic, ginger, bell pepper, carrots, potatoes, scotch bonnet peppers, thyme, and brown sugar; sauté briefly.
  4. Pour in coconut milk and chicken stock; stir in additional curry powder and ground allspice.
  5. Bring to a boil, then reduce heat to low and simmer for about 40 minutes until chicken is fully cooked.
  6. Adjust seasoning as needed and serve hot.
