  • 2 large eggs
  • 1 1/2 cups grated pecorino romano cheese (divided)
  • 1/2 teaspoon black pepper

  1. Cook the pasta: In a large pot, bring water to a boil, add salt, and cook spaghetti according to package instructions. Reserve 1.5 cups of pasta water before draining.
  2. Prepare the pancetta: In a large saucepan over medium heat, cook pancetta until crisp (7-10 minutes). Drain excess fat but keep 2 tablespoons in the pan.
  3. Mix the eggs: In a mixing bowl, whisk together egg yolks, whole eggs, and 1 cup of pecorino until smooth.
  4. Combine: Toss cooked spaghetti with pancetta and reserved grease. Quickly pour in the egg mixture along with ½ cup pasta water, tossing for about two minutes until combined. Add more water as needed for creaminess.
