  • 8 slices of feta cheese (or kashkaval)
  • 1 long baguette (thickly sliced)
  • 1 onion (red or white)
  • 2 ripe tomatoes
  • 20 black olives
  • 2 cabanossi sausages (about 9 oz/200 g)
  • Fresh vegetables (cucumber, radishes, sweet peppers)

Instructions

  1. Gather and wash all ingredients. Slice the baguette thickly.
  2. Heat a skillet over medium heat. Whisk eggs with a pinch of salt and cook in the skillet until desired firmness.
  3. Add oil to the skillet and sauté sliced cabanossi sausages until golden brown.
  4. On a serving platter, arrange baguette slices around the edge, with eggs in the center, followed by sausages, olives, tomatoes, cucumber slices, radishes, peppers, and feta.
  5. Serve immediately with optional ajvar or zacusca on the side.
