  • 225 g Oats (2 ¼ cups)
  • 2 tsp Baking Powder
  • 400 g Ripe Bananas (4 medium bananas – 2 cups)
  • 300 g Blackberries (2-3 cups)
  • 80 ml Water (⅓ cup)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. Blend oats into a fine flour if using whole oats.
  3. In a bowl, mix oat flour and baking powder.
  4. Mash ripe bananas until smooth in another bowl.
  5. Combine mashed bananas with water and mix into the dry ingredients until just combined.
  6. Gently fold in blackberries.
  7. Spoon batter into muffin cups and bake for 22-30 minutes until a toothpick comes out clean.
  8. Let muffins cool for 10 minutes before transferring to a wire rack.
