  • 270 g Whole Wheat Flour (2 + 1/3 cups)
  • 1 + 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 300 g Ripe Banana (3 large)
  • 2 Eggs
  • 60 g Extra Virgin Olive Oil
  • 80 g Maple Syrup
  • 1 tbsp Caramel Essence (optional)
  • 250 g Cream Cheese (1 cup)
  • 250 g Greek Yoghurt (1 cup)
  • 80 g Maple Syrup (1/4 cup)
  • 130 g Smooth Peanut Butter (1/2 cup)
  • 40 g Maple Syrup (2 tbsp)
  • 60 g Milk (1/4 cup)
  • 80 g Banana (sliced into thin coins)
  • 20 g Dark Chocolate (optional)

Instructions

  1. Preheat the oven to 175°C (350°F) and grease a 9-inch round baking pan.
  2. In a bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
  3. Mash ripe bananas in another bowl and mix in eggs, olive oil, maple syrup, and optional caramel essence.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. Cool the cake for 10 minutes before transferring it to a wire rack.
  7. While cooling, prepare the frosting by mixing cream cheese, Greek yogurt, and maple syrup until smooth.
  8. For the peanut butter caramel, melt peanut butter with milk and maple syrup over low heat.
  9. Assemble by slicing the cooled cake horizontally; frost one layer, drizzle with caramel, add banana slices, and top with the second layer and remaining frosting.
