  • 1 cup white granulated sugar
  • 1/2 cup light brown sugar
  • 1/3 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • pinch all-spice (optional)
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter (optional)

Instructions

  1. Prepare the apples by peeling, coring, and chopping them into 1-inch pieces.
  2. In a large bowl, mix chopped apples with lemon juice and zest.
  3. In a medium saucepan over medium heat, combine water, sugars, spices, cornstarch, and salt; stir until smooth.
  4. Bring the mixture to a boil while stirring; cook for 2-3 minutes until slightly thickened.
  5. Add the prepared apples to the saucepan; reduce heat to low and simmer for 6-8 minutes until apples are tender but firm.
  6. If needed, thicken with a cornstarch slurry (mix cornstarch with water) and simmer for an additional few minutes.
  7. Remove from heat; stir in butter if desired and let cool before storing.
