  • 30 Biscoff cookies
  • 400 g whipping cream or heavy cream
  • 1 tablespoon vanilla extract
  • 200 g Biscoff spread (warmed until runny)

Instructions

  1. Line a 9×9-inch pan with parchment paper.
  2. In a large mixing bowl, add the whipping cream and vanilla extract. Use an electric hand mixer to whip until firm peaks form.
  3. Warm the Biscoff spread in a microwave-safe bowl until runny, then fold into the whipped cream gently with a spatula.
  4. Layer half of the Biscoff cookies on the bottom of the prepared pan, pour the whipped cream mixture over them, and smooth it out evenly. Add another layer of cookies on top.
  5. Freeze for at least 4 hours or overnight.
  6. Once frozen, lift out using parchment paper and slice into individual sandwiches.
