  • 2 ripe bananas (mashed)
  • 2 eggs
  • ¼ cup maple syrup (or honey)
  • ¼ cup coconut sugar
  • ¼ cup melted coconut oil
  • ¼ cup plain Greek yogurt
  • Zest and juice of 1 lemon
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 350°F and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together mashed bananas, eggs, maple syrup, coconut sugar, melted coconut oil, Greek yogurt, lemon zest and juice.
  3. Add flour, baking soda, and mix until just combined; do not overmix.
  4. Gently fold in blueberries coated in a little flour to prevent sinking.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes until a toothpick comes out mostly clean.
  7. Cool for 10–15 minutes in the pan before transferring to a wire rack.
