  • 1 lb bulk breakfast sausage
  • 1 medium red pepper, chopped
  • 1 small onion, chopped
  • ½ cup chopped green onions
  • 2½ cups shredded cheddar cheese (divided)
  • 10 whole flour tortillas
  • 2 cups half-and-half
  • 6 eggs
  • 1 tablespoon flour

Instructions

  1. Cook the sausage, red pepper, and onion in a large pan over medium heat until the sausage is browned.
  2. In a mixing bowl, combine the cooled sausage mixture with chopped green onions and 2 cups of shredded cheddar cheese.
  3. Scoop filling onto each flour tortilla and roll tightly; place seam side down in a greased baking dish.
  4. Whisk together half-and-half, eggs, and flour; pour over rolled tortillas.
  5. Cover and refrigerate overnight.
  6. Preheat oven to 350ºF (175ºC). Bake covered for 30–40 minutes until eggs are set; uncover and bake for an additional 10 minutes after adding remaining cheese.
