  • 1 cup brown sugar

  • 1.5 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp cinnamon powder
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1.5 cups toasted pecans (roughly chopped)
  • 1/2 cup toffee bits (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cookie tray with parchment paper.
  2. In a mixing bowl, cream together melted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla extract; mix until smooth.
  4. Incorporate flour, cinnamon, cornstarch, baking soda, and baking powder; stir until just combined.
  5. Fold in chopped pecans and optional toffee bits.
  6. Chill dough for 30-45 minutes in the refrigerator for easier handling.
