  • lbs beef chunks (sirloin or ribeye)
  • 20 oz cheese-filled tortellini
  • 5 tablespoons butter (3 + 2)
  • 3 garlic cloves
  • 2 cups heavy cream
  • 1½ cups grated Parmesan cheese
  • Salt and black pepper (to taste)

Instructions

  1. Boil the tortellini in salted water according to package instructions (7-9 minutes). Drain and toss with olive oil.
  2. In a skillet, melt 3 tablespoons of butter over medium-high heat, add crushed garlic, and sauté for about 30 seconds. Add beef chunks in one layer; season with salt and pepper. Sear for 2-3 minutes on each side until browned. Remove steak from the skillet.
  3. In the same skillet, melt another 2 tablespoons of butter, add heavy cream, and bring to a light bubble while stirring. Gradually mix in Parmesan until smooth and thickened (about 5-7 minutes). Season with salt and pepper.
  4. Fold the cooked tortellini into the sauce until well-coated.
  5. Serve topped with seared beef and drizzle any leftover sauce over it.
