  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 3 cups chicken broth
  • 1 cup half-and-half
  • 3 cups cooked chopped chicken
  • 1 lb smoked or andouille sausage (sliced)
  • 2 cans red beans (15 oz each)
  • 1 can white corn (11 oz)
  • 2 cans chopped green chilies (4 oz each)
  • 2 Tbsp dried minced onion flakes
  • ¼ tsp garlic powder
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1½ Tbsp cajun seasoning
  • 2 cups shredded pepper jack cheese

Instructions

  1. In a Dutch oven, melt butter over medium heat. Stir in flour and cook until golden. Gradually whisk in chicken broth and half-and-half. Bring to a boil until thickened (about 2 minutes).
  2. Add cooked chicken, sliced sausage, red beans, corn, green chilies, onion flakes, garlic powder, cumin, chili powder, and cajun seasoning to the pot. Stir well.
  3. Simmer on low heat for 10 to 15 minutes, stirring occasionally.
