A fun, vibrant cake that looks just like a watermelon—complete with red cake, chocolate chip “seeds,” and a green-striped buttercream rind. Perfect for summer parties!

Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp watermelon extract (optional)
  • 1 cup whole milk
  • Red gel food coloring
  • ½ cup mini chocolate chips
  • Green, dark green, and yellow gel food coloring (for frosting)
  • 3 cups buttercream frosting

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a bowl, whisk together flour, baking powder, and salt.

3. In another bowl, beat butter and sugar until light and fluffy.

4. Add eggs one at a time, then mix in vanilla and optional watermelon extract.

5. Alternate adding dry ingredients and milk to the wet mixture.

6. Stir in red food coloring until a vibrant red is achieved.

7. Fold in mini chocolate chips.

8. Divide batter into pans and bake for 25–30 minutes. Let cool completely.

9. Tint buttercream with green food coloring. Use light green for base and dark green for stripes.

10. Frost sides of cake with light green, pipe dark green stripes. Optional: add a white band between red and green layers.

11. Frost top with red or pink, and press mini chocolate chips on top as “seeds.” Chill before slicing.

Notes

* For deeper color, use gel food coloring instead of liquid.

* Watermelon extract enhances flavor but is optional.

* Best served chilled during warm weather.
