  • 5 1/2 Tbsp butter
  • 1 1/3 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 2 cloves garlic
  • 3 1/2 cups cubed russet potatoes
  • 3 cups chopped broccoli florets
  • 3 cups low-sodium chicken broth
  • 6 Tbsp all-purpose flour
  • 3 cups milk (preferably 1% or 2%)
  • 1/2 cup heavy cream
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. In a large pot over medium heat, melt 1.5 Tbsp butter. Sauté carrots, celery, and onion for about 4 minutes until softened; add garlic and sauté for another 30 seconds.
  2. Stir in chicken broth, cubed potatoes, thyme, salt, and pepper; bring to a boil. Cover and reduce heat to medium; cook for about 15 minutes.
  3. Add broccoli florets and cook for an additional 5 minutes until all vegetables are tender.
  4. In a medium saucepan over medium heat, melt remaining butter; whisk in flour for one minute. Gradually add milk while whisking until smooth; stir in heavy cream.
  5. Combine the creamy mixture into the soup pot; mix in cheddar cheese until melted. Serve warm.
