  • 4 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente (8-10 minutes). Drain, reserving about ½ cup of the pasta water.
  2. In a skillet over medium heat, melt butter and olive oil. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Lower the heat and stir in Parmesan and mozzarella cheeses until melted into a creamy sauce. Gradually add reserved pasta water until desired consistency is achieved.
