  • 1 tbsp unsalted butter
  • 1.8 pounds starchy potatoes (preferably white)
  • 2 chopped Romano peppers (or bell peppers)
  • 1.1 pounds lean ground beef
  • 1 finely chopped yellow onion
  • 2 minced garlic cloves
  • 1 tsp sweet paprika
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp chili flakes
  • 2 tbsp double concentrated tomato paste
  • 2 cups chicken broth
  • 1.5 cups grated cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Prepare ingredients by chopping vegetables and slicing potatoes.
  2. In a nonstick skillet, heat olive oil and butter over medium-high heat; add sliced potatoes and cook until golden brown (about 6 minutes). Set aside.
  3. In the same skillet, sauté chopped peppers until soft (about 3 minutes), then add ground beef and cook until browned.
  4. Add garlic and onion; stir until fragrant. Mix in spices and tomato paste.
  5. Return potatoes to the skillet with parsley; pour in chicken broth and cover. Cook for about 10 minutes or until potatoes are tender.
  6. Sprinkle cheese on top; cover again to melt completely.
  7. Serve hot with extra parsley on top.
