  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix (halal-certified)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • Optional: 1/2 cup sour cream for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut baby potatoes into halves or quarters.
  3. Slice smoked sausage into 1/4-inch rounds.
  4. In a bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper.
  5. Combine potatoes with olive oil and half the seasoning mixture; toss to coat.
  6. Line a baking sheet with parchment paper. Spread potatoes in a single layer.
  7. Add sliced sausage on top of the potatoes.
  8. Roast in the oven for about 35-40 minutes until golden brown; stir halfway through.
  9. Sprinkle cheese over the top and return to oven for another 5 minutes until melted.
