  • 650 g Chicken Breast Fillets (4 chicken breasts)
  • 300 g Orzo, uncooked (1.5 cups)
  • 600 ml Chicken Stock (2.5 cups)
  • 250 g Cherry Tomatoes (1.5 cups)
  • 200 g Baby Spinach (7 cups)
  • 100 g Feta Cheese (½ cup)
  • 1 tbsp Minced Garlic
  • 2 tbsp Lemon Juice

Instructions

  1. Preheat your oven to 350℉ (180℃).
  2. Season chicken breasts with cajun spice, garlic granules, and salt.
  3. In a casserole dish, combine uncooked orzo, chicken stock, minced garlic, lemon juice, halved cherry tomatoes, and chopped spinach; stir well.
  4. Place feta in the center and arrange seasoned chicken around it.
  5. Cover the dish with foil and bake for 10 minutes.
  6. Remove the cover and continue baking for an additional 20 minutes until chicken is fully cooked.
  7. Slice the chicken and mix the feta into the orzo before serving.
