  • 2 boneless, skinless chicken breasts
  • 8 oz egg noodles (or preferred pasta)
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • Salt and black pepper, to taste
  • Optional: Grated parmesan cheese and red pepper flakes

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and thyme.
  2. Sear chicken for 5-6 minutes on each side until cooked through (165°F internal temperature). Remove and slice.
  3. Boil salted water in a pot; cook noodles according to package instructions until al dente. Drain and reserve some pasta water.
  4. In the same skillet, melt butter and sauté minced garlic until fragrant.
  5. Add chicken broth; simmer for 3-4 minutes. Stir in heavy cream; let thicken for another 3-4 minutes.
  6. Toss cooked noodles in the sauce; add reserved pasta water if needed.
  7. Return sliced chicken; mix well and season to taste.
