  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 6 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)

Instructions

  1. Season chicken breasts with salt and pepper. In a skillet, heat olive oil and butter over medium heat. Cook chicken for 5-7 minutes per side until golden brown. Remove from skillet.
  2. In the same skillet, sauté minced garlic for about 1 minute. Add chicken broth and simmer for 2-3 minutes.
  3. Stir in heavy cream and allow it to gently simmer. Add fresh spinach until wilted, then mix in Parmesan cheese until melted.
  4. Return the chicken to the skillet, coating it in the sauce and sprinkle with Italian seasoning. Simmer for an additional 3-5 minutes before serving.
