  • 1 lb boneless, skinless chicken breasts
  • 1 cup celery (diced)
  • 1 cup carrots (sliced)
  • 1 cup onion (finely chopped)
  • 1/2 tablespoon garlic (minced)
  • 2 cups Yukon gold potatoes (cubed)
  • 3 cups low-sodium chicken broth
  • Milk of choice for creaminess
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping vegetables and cutting chicken into bite-sized pieces.
  2. Heat olive oil in your instant pot or large pot over medium heat. Sauté onions until translucent, then add garlic and cook until fragrant.
  3. Add chicken pieces and brown them until no longer pink.
  4. Stir in celery, carrots, potatoes, seasonings, and chicken broth; mix well.
  5. If using an instant pot, secure the lid and cook on high pressure for 10 minutes with natural release; for stovetop, bring to a boil then simmer for about 30 minutes until veggies are tender.
  6. Stir in milk before serving and garnish with fresh parsley.
