  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts
  • 1 cup diced celery
  • 1 cup sliced carrots
  • 1 cup finely chopped onion
  • 2 cups diced Yukon gold potatoes
  • 3 cups low-sodium chicken broth
  • 1/2 cup milk of choice
  • Seasonings: garlic, black pepper, salt, dried parsley, basil, rosemary

Instructions

  1. Heat olive oil in your pot (Instant Pot or large pot) over medium heat. Sauté celery, carrots, and onion until softened.
  2. Add chicken breasts and pour in chicken broth along with garlic and seasonings.
  3. Stir in Yukon gold potatoes and combine well.
  4. Cook: For Instant Pot – seal and cook on high pressure for 15 minutes; for Crockpot – low for 6 hours or high for 3 hours; for stovetop – simmer covered for about 30 minutes.
  5. Shred cooked chicken using two forks and return to the pot.
  6. Stir in milk until blended well. Adjust seasoning to taste before serving hot.
