  • 3 ribs celery
  • 4 cloves garlic
  • 1/2 lb. carrots
  • 1.75 lbs. boneless, skinless chicken thighs
  • 2 cups chicken broth
  • 2 cups vegetable broth
  • 1.5 lbs. baby potatoes
  • Fresh herbs (parsley, thyme, rosemary, sage)

Instructions

  1. Dice onion and celery, mince garlic, slice carrots, and cut baby potatoes in half.
  2. Cut chicken into 1-inch pieces and coat with flour.
  3. Heat butter and olive oil in a large pot over medium heat.
  4. Brown the chicken on all sides; remove from pot.
  5. Sauté onion, celery, garlic, and carrots until soft.
  6. Add remaining flour to vegetables and cook for two minutes.
  7. Return chicken to pot; add potatoes, herbs, pepper, and broths.
  8. Bring to boil; cover and simmer on medium-low for 30 minutes until tender.
  9. Taste and adjust seasoning; garnish with fresh parsley if desired.
