  • 240 g Chickpeas (1 tin drained and rinsed)
  • 80 g Peanut butter (or any nut or seed butter)
  • 80 g Liquid sweetener
  • 100 g Dark Chocolate

Instructions

  1. Blend oats in a food processor until finely ground to make oat flour.
  2. Add chickpeas, peanut butter, and liquid sweetener to the oat flour, blending until smooth and creamy.
  3. Roll the mixture into bite-sized balls and place on a baking paper-lined tray.
  4. Chill the truffles in the fridge for 15–20 minutes to firm up.
  5. Melt dark chocolate using a double boiler or microwave until smooth.
  6. Dip each chilled truffle into melted chocolate, allowing excess to drip off before returning to the tray.
  7. Let the chocolate set in the fridge for 10–15 minutes before serving.
