Enjoy these delicious Chocolate Date Caramels made with wholesome ingredients. Perfectly chewy and sweet, they’re an irresistible no-bake treat!

Ingredients

  • 250 g Soft Medjool Dates (pitted)
  • 125 g Nut Butter (almond, peanut, or cashew)
  • 1 tsp Vanilla extract
  • 1 pinch Sea Salt
  • 1-2 tbsp Milk (optional)
  • 150 g Dark Chocolate (chopped or chips)
  • 1 tsp Coconut oil (optional for dipping)

Instructions

  1. Line a small loaf tin with parchment paper. Soak dates in boiling water for 5 minutes to soften, then drain.
  2. In a food processor, blend dates, nut butter, vanilla extract, and salt until smooth. Add milk if needed for consistency.
  3. Press the mixture into the lined tin evenly and freeze for 20–30 minutes until firm.
  4. Cut into squares once set.
  5. Melt dark chocolate with coconut oil in a heatproof bowl using microwave or double boiler.
  6. Dip each caramel square into melted chocolate using a fork and place on parchment-lined tray. Optionally sprinkle with sea salt.
  7. Refrigerate dipped caramels for 10–15 minutes until chocolate sets.
