  • 1 can (14.5 ounces) diced tomatoes
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 2 tablespoons olive oil, divided
  • 2 teaspoons curry powder
  • 1 teaspoon kosher salt, divided
  • 1 teaspoon red pepper flakes
  • ½ teaspoon ground black pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Sauté the onion until translucent (3-4 minutes), then add the bell pepper and cook for another 3 minutes.
  3. Stir in garlic and ginger; cook for about 30 seconds.
  4. Add curry powder, salt, red pepper flakes, and black pepper; stir until fragrant (30 seconds).
  5. Pour in coconut milk and diced tomatoes; mix well.
  6. Add shrimp; gently stir to coat. Increase heat until boiling then reduce to a simmer for about 10 minutes.
  7. Garnish with optional herbs before serving.
