  • 1 lb ground Italian sausage (or ground beef/chicken)
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • For the cheese topping: 1 cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Cook the sausage until browned.
  2. Add chopped onion and sauté until softened. Stir in minced garlic.
  3. Pour in chicken broth and bring to a simmer. Add Italian seasoning, salt, and pepper.
  4. Stir in broken lasagna noodles and simmer for about 10-12 minutes until tender.
  5. Lower heat and mix in heavy cream and Alfredo sauce; simmer for an additional 2-3 minutes.
  6. In a separate bowl, combine ricotta, mozzarella, Parmesan, and mix until smooth.
  7. Serve soup topped with the cheesy mixture.
