  • 2 skinless, boneless chicken breasts (300g)
  • 50g chorizo
  • 160g baby tomatoes (1 cup), halved
  • 2 tbsp tomato puree
  • 1 tsp Cajun spice
  • 150g uncooked orzo (1 cup)
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. In a large pan over medium-high heat, cook diced chicken and sliced chorizo for 3-5 minutes until lightly browned.
  2. Stir in halved baby tomatoes and cook for an additional 3-5 minutes until softened.
  3. Mix in tomato puree and Cajun spice, coating the chicken and chorizo evenly.
  4. Add uncooked orzo, milk, and half a cup of boiling water. Stir well, bring to a boil, then reduce heat to simmer.
  5. Cook for 8-10 minutes, stirring occasionally until orzo is tender and sauce thickens. Add more boiling water if necessary.
  6. Season with salt and pepper before serving.
