  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 8 ounces fettuccine pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with Cajun seasoning on both sides.
  3. Cook chicken in the skillet for 6 to 7 minutes per side until golden brown.
  4. Remove chicken from the skillet and let it rest before slicing.
  5. In the same skillet, melt butter and sauté minced garlic for 1 to 2 minutes.
  6. Add heavy cream and chicken broth; simmer for 3 to 4 minutes.
  7. Stir in grated Parmesan cheese until melted.
  8. Cook fettuccine according to package instructions; drain and reserve some pasta water.
  9. Slice rested chicken and mix fettuccine into the sauce, adding reserved water if needed.
  10. Top with sliced chicken, parsley, and lemon juice before serving hot.
