  • 6 oz bacon, chopped
  • 1 large yellow onion, diced
  • 1 celery rib, diced
  • 2 lbs carrots, peeled and sliced
  • 2 garlic cloves, minced
  • 4 cups chicken stock
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • Sea salt and black pepper to taste

Instructions

  1. In a Dutch oven over medium heat, brown the chopped bacon until crispy. Remove with a slotted spoon.
  2. In the same pot, sauté diced onion and celery for 6-8 minutes until softened. Stir in sliced carrots, garlic, salt, and pepper; cook for another minute.
  3. Add chicken stock and bring to a simmer. Cover partially and cook for 20-25 minutes until carrots are tender.
  4. Blend the soup until smooth using an immersion blender or by transferring it to a countertop blender in batches.
  5. Stir in milk and cream; season with additional salt and pepper if needed.
