  • 6 oz bacon (chopped)
  • 1 large yellow onion (diced)
  • 1 celery rib (diced)
  • 2 lbs carrots (peeled and sliced)
  • 2 garlic cloves (minced)
  • 4 cups chicken stock
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • Sea salt and black pepper to taste

Instructions

  1. In a Dutch oven or large pot, brown the chopped bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
  2. In the same pot, sauté diced onion, celery, and sliced carrots in the rendered bacon fat for about 6-8 minutes until softened. Add minced garlic, sea salt, and black pepper; cook for another minute.
  3. Pour in 4 cups of chicken stock and bring to a simmer. Cover partially and cook for 20-25 minutes or until carrots are tender.
  4. Blend the soup using an immersion blender or regular blender until smooth.
  5. Return the pureed soup to the pot, stir in milk and heavy cream, and adjust seasoning if needed before serving.
