  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (10 ounce) can Rotel diced tomatoes with green chilies (with juices)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 tablespoon chili powder
  • 1 (12 ounce) can corn (drained)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 2 cups cooked chicken (I used a rotisserie chicken)
  • 1 cup heavy/whipping cream
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot, heat olive oil over medium-high heat. Sauté chopped onion for 5-7 minutes until lightly browned.
  2. Stir in crushed tomatoes, Rotel, chicken broth, garlic powder, smoked paprika, chili powder, corn, and black beans. Mix well.
  3. Bring the mixture to a boil over high heat, then reduce heat to low and let it simmer uncovered for about 5 minutes.
  4. While simmering, prepare any desired toppings such as diced avocado or tortilla strips.
  5. Add heavy cream and cooked chicken to the pot. Warm through for another 3-5 minutes and season with salt and pepper to taste.
  6. Serve hot in bowls topped with your favorite toppings.
