  • 4 strips bacon
  • 1/2 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 2 medium carrots (peeled & chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn (fresh or frozen)
  • 2 large Russet potatoes (peeled & diced)
  • Italian seasoning
  • cayenne pepper
  • salt
  • pepper

Instructions

  1. Cook bacon in a large pot over medium-high heat until crispy. Transfer to paper towels, reserving fat.
  2. Sauté onion, celery, and carrots in the bacon fat for about 5 minutes until softened.
  3. Add minced garlic and cook for another 30 seconds.
  4. Stir in flour and cook for 1 minute to create a roux.
  5. Gradually add chicken broth while stirring to combine.
  6. Mix in cream, corn, diced potatoes, seasonings, and most of the bacon; reserve some for garnish.
  7. Bring to a boil and then simmer with the lid slightly ajar for about 15-20 minutes until potatoes are tender.
  8. Season to taste with salt and pepper before serving hot.
