  • 4 strips bacon
  • 1/2 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 2 medium carrots (peeled and chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn (frozen or fresh)
  • 2 large Russet potatoes (peeled and diced)
  • Italian seasoning
  • cayenne pepper (optional)
  • salt

Instructions

  1. Cook the bacon in a large pot over medium-high heat until crispy. Remove and set aside.
  2. In the bacon fat, sauté onion, celery, and carrots for about 5 minutes until softened.
  3. Add minced garlic; cook for another 30 seconds.
  4. Stir in flour; cook for one minute to eliminate raw taste.
  5. Slowly pour in chicken broth while stirring, scraping any browned bits from the pot.
  6. Mix in heavy cream, corn, diced potatoes, seasonings, and most of the bacon.
  7. Bring to a boil; then reduce heat to simmer uncovered until potatoes are tender (15–20 minutes).
  8. Season with salt and pepper; serve hot garnished with remaining bacon.
