  • 2 cups vegetable or chicken broth
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the diced onion for about 3-4 minutes until translucent.
  2. Add minced garlic and garlic powder; cook for an additional minute. Stir in the orzo and toast for 1-2 minutes.
  3. Pour in the broth, bring to a boil, then reduce to a simmer. Add broccoli florets and cover; cook for 8-10 minutes, stirring occasionally.
  4. Once cooked, remove from heat and stir in heavy cream and shredded cheddar until creamy.
