  • 3-4 lbs ripe organic tomatoes
  • 2 garlic bulbs
  • 1/2 onion
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream (or coconut/cashew cream for vegan)
  • 2 cups organic vegetable stock
  • 4 Tbsp tomato paste
  • Seasonings: sea salt, On Everything All-Purpose Blend, smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). On a baking sheet, combine tomato wedges and whole garlic bulbs. Drizzle with olive oil and sprinkle with sea salt. Roast for 25–30 minutes until caramelized.
  2. In a large pot, heat olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes).
  3. Add roasted tomatoes and peeled garlic to the pot. Stir in tomato paste, vegetable stock, smoked paprika, and seasoning blend. Bring to a gentle simmer.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Stir in heavy cream (or vegan alternative) and adjust seasoning as needed. Heat through before serving.
