Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/4 teaspoon thyme

Instructions

  1. Cook the rice: Combine rice, chicken broth, and salt in a medium saucepan. Bring to a boil; reduce heat and simmer covered for 15-18 minutes until tender.
  2. Season and cook chicken: Heat olive oil in a large skillet over medium heat. Season chicken with spices; cook each side for 6-7 minutes until golden brown and reach an internal temperature of 165°F. Remove from skillet.
  3. Make the creamy sauce: In the same skillet, melt butter; whisk in flour to create a roux. Gradually add milk and broth while whisking to prevent lumps. Stir in spices; simmer until thickened.
  4. Combine: Add cooked rice to sauce; stir well. Return chicken on top; cover and simmer for an additional 3-5 minutes.
  5. Serve: Garnish with chopped parsley before serving hot.
