  • 1/2 cup carrots (chopped)
  • 1/4 cup onion (diced)
  • 8 oz macaroni noodles
  • 3 Tbsp all-purpose flour
  • 3 Tbsp extra virgin olive oil
  • 1/2 cup unsweetened non-dairy milk
  • 2 Tbsp nutritional yeast
  • 1 Tbsp lemon juice
  • Spices: garlic powder, salt, dijon mustard, turmeric

Instructions

  1. In a medium saucepan, combine chopped potatoes, carrots, onion, and water. Bring to a boil and simmer until tender (about 8–10 minutes).
  2. In a small saucepan over low-medium heat, whisk together olive oil and flour until smooth. Slowly add non-dairy milk while whisking until thickened.
  3. Cook pasta according to package instructions.
  4. Drain veggies but reserve liquid. Blend veggies with the sauce mixture in a food processor until smooth.
  5. Mix creamy sauce with cooked pasta until well coated.
