  • 1 packet taco seasoning
  • 3/4 cup red enchilada sauce
  • 2 1/2 cups Oaxaca cheese or Mexican cheese
  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a skillet over medium-high heat, brown the ground beef while breaking it apart. Stir in taco seasoning and enchilada sauce; simmer briefly.
  3. Wrap corn tortillas in a damp paper towel and microwave for 30–60 seconds until pliable.
  4. Brush one side of each tortilla with olive oil and place on a baking sheet oiled side down. Add cheese and beef mixture to one half of each tortilla, fold over, and secure.
  5. Bake for about 16 minutes until golden brown and crispy. Cool for 3 minutes before serving.
