  • 23 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, chopped
  • 34 garlic cloves, minced
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Italian seasoning
  • optional crushed red pepper flakes

Instructions

  1. Place raw chicken in the bottom of the crock pot.
  2. Add chopped onion, minced garlic, Italian seasoning, red pepper flakes (if using), and crushed tomatoes.
  3. Pour chicken broth over all ingredients.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  5. Shred the cooked chicken and return it to the pot.
  6. Stir in heavy cream and gradually add Parmesan cheese until melted.
  7. Cook uncovered on low for another 20–30 minutes to meld flavors before serving.
