  • 4 boneless, skinless chicken breasts
  • 1/2 cup olive oil
  • 1/3 cup chicken broth
  • 3 teaspoons ground thyme
  • 1 tablespoon crushed rosemary
  • 2 teaspoons ground allspice
  • 1 tablespoon ground ginger
  • 1 tablespoon kosher salt
  • 1 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoon ground nutmeg
  • 1 1/2 teaspoon smoked garlic powder
  • 1 1/2 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon red pepper flakes (more or less, to taste)
  • 1 lime, sliced
  • 6 bay leaves

Instructions

  1. In a medium bowl, mix all spices and seasonings with olive oil until combined.
  2. Coat the chicken breasts in the jerk mixture thoroughly.
  3. Pour chicken broth into the slow cooker and layer lime slices at the bottom.
  4. Add coated chicken on top of lime slices and place bay leaves on top.
  5. Cook on HIGH for 3 hours or LOW for 6 hours until fully cooked.
  6. Shred the chicken with two forks and mix it back into the juices in the slow cooker.
  7. Serve over coconut rice or in tortillas with desired toppings.
