  • 1 lb baby carrots
  • 1.5 lbs boneless skinless chicken breasts
  • 5 tbsp unsalted butter
  • 5 cloves garlic (minced)
  • Juice and zest of 1.5 lemons
  • 1 tbsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/8 tsp cayenne pepper or red pepper flakes
  • 1 tsp kosher salt (plus additional as needed)
  • 1/4 tsp ground black pepper (plus additional as needed)
  • 2 tbsp honey
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the vegetables by cutting larger potatoes into quarters and placing them in the slow cooker.
  2. Add baby carrots evenly among the potatoes and place chicken breasts on top.
  3. In a saucepan, melt butter; stir in garlic, lemon juice, zest, seasonings, and pour half over chicken and veggies.
  4. Cover and cook on HIGH for 1.5 to 2 hours or LOW for 4 to 5 hours until chicken reaches 165°F.
  5. Check vegetable tenderness; continue cooking if necessary. Drizzle remaining sauce over dish before serving.
