  • 1 pound breakfast sausage
  • ¼ cup chopped onion
  • 1 can (10 oz) Rotel diced tomatoes & green chilies (drained)
  • 1 can (15.25 oz) whole kernel corn (including liquid)
  • 32 oz frozen tater tots
  • 3 cups shredded Colby cheese

Instructions

  1. In a skillet over medium heat, sauté chopped onion until soft. Add ground beef and breakfast sausage; cook until browned. Stir in drained tomatoes and corn.
  2. Spray slow cooker with cooking spray. Layer half of the tater tots in the bottom, followed by half of the meat mixture. Repeat layers.
  3. Cook on High for 2 ½ hours. Add cheese on top and cook for an additional 30 minutes until melted.
