  • 1/2 cup softened butter
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg
  • 2 & 1/3 cups flour
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl or stand mixer, cream together butter, vegetable oil, granulated sugar, and powdered sugar until smooth. Add egg and vanilla; mix well.
  3. Gradually incorporate flour, salt, and baking powder until fully combined.
  4. Scoop out equal-sized cookie balls onto the prepared sheet and flatten slightly. Create a well in the center for the filling.
  5. In a separate bowl, combine filling ingredients: melted butter, brown sugar, chopped pecans, heavy cream, cinnamon, nutmeg, and salt. Spoon into each cookie well.
  6. Bake for about 8-9 minutes or until golden around the edges. Let cool before serving.
