  • 13.5 oz can of coconut cream (solid parts only)
  • 1/2 cup coconut milk
  • 1/2 cup pistachio cream
  • 1 tsp vanilla extract
  • 1/4 cup coconut sugar
  • 1 cup kataifi
  • 2 tsp oil
  • 1 cup chocolate (melted)
  • 3 tsp coconut oil
  • Chopped pistachios (for garnish)

Instructions

  1. In a blender, combine coconut cream, coconut milk, pistachio cream, vanilla extract, and coconut sugar. Blend until smooth.
  2. Pour the mixture into ice cream bar molds and freeze for about 2 hours.
  3. While freezing, heat oil in a skillet over medium heat and toast kataifi until golden brown (5-7 minutes). Mix with additional pistachio cream and set aside.
  4. After 2 hours, remove bars from molds and fill centers with the kataifi mixture. Freeze for another 20 minutes.
  5. Melt chocolate and coconut oil in a microwave-safe bowl. Dip each bar in the melted chocolate and place on parchment paper to set.
  6. Optionally drizzle remaining chocolate over bars and sprinkle with chopped pistachios before freezing again.
