  • 2-3 pounds Beef chuck roast
  • 2 tablespoons Olive oil
  • 2 Yellow onions
  • 4 garlic cloves
  • 2 Dried Ancho chiles
  • ½ teaspoon ground cinnamon
  • 1 tablespoon Ground Cumin
  • ½ teaspoon Ground Smoked Paprika (or Ground Chipotle Pepper)
  • ½ teaspoon Dried thyme (ground or whole)
  • 1 tablespoon Dried oregano
  • 2 teaspoons salt
  • 2 teaspoons Ground black pepper
  • 2 bay leaves
  • 1 cup Fresh Cilantro Leaves
  • 8 ounces Tomato sauce
  • 4-5 cups Beef stock or broth
  • 18 Corn Tortillas, 6 inch
  • 20 ounces Oaxaca cheese, shredded

Instructions

  1. Chop onions, mince garlic, and soak ancho chiles in hot water until soft.
  2. In a skillet, sear the beef chuck roast in olive oil until browned on all sides.
  3. Transfer seared meat to the slow cooker; add onions, garlic, spices, cilantro, tomato sauce, and beef stock. Stir well.
  4. Cover and cook on low for 8-10 hours or high for 4-5 hours until fork-tender.
  5. Blend the broth until smooth to make consomme.
  6. Warm tortillas in a skillet; fill each with shredded beef and Oaxaca cheese before folding.
  7. Serve hot alongside consomme for dipping.
