  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 cups chicken or vegetable broth
  • 1 (14-ounce) can fire-roasted diced tomatoes (with juices)
  • 3 (14-ounce) cans black beans (drained & rinsed)
  • 1 (4-ounce) can diced green chilies (with juices)
  • 1/2 red bell pepper (chopped)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 tablespoon lime juice
  • Salt and pepper (to taste)

Instructions

  1. In a soup pot, heat olive oil over medium heat. Sauté chopped onion for 5-7 minutes until lightly browned.
  2. Add minced garlic and stir for about 30 seconds.
  3. Pour in chicken or vegetable broth, followed by diced tomatoes, black beans, green chilies, red bell pepper, chili powder, smoked paprika, and ground cumin. Mix well.
  4. Increase heat to high and bring to a boil. Cover with the lid slightly open; reduce the heat and simmer for 8-10 minutes.
  5. Blend the soup partially with an immersion blender or regular blender for desired texture.
  6. Stir in lime juice and season with salt and pepper to taste.
  7. Serve warm with your choice of toppings.
