  • 5 pieces of bacon
  • 1 lb ground beef
  • 1/4 cup butter
  • 1/4 cup onion (diced)
  • 2 sticks celery (diced)
  • 1/2 teaspoon minced garlic
  • 6 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 lb Yukon potatoes (peeled & diced small)
  • 2 cups sharp cheddar cheese (shredded)

Instructions

  1. Cook bacon in a soup pot over medium-high heat until crispy; transfer to a paper towel-lined plate.
  2. In the same pot, brown ground beef and drain excess fat; set aside.
  3. Sauté onion and celery in melted butter for 4–5 minutes until tender.
  4. Stir in garlic and flour; cook for about 2 minutes.
  5. Gradually whisk in chicken broth until smooth.
  6. Add heavy cream, Worcestershire sauce, potatoes, and cooked beef; bring to a boil, then reduce heat to simmer.
  7. Simmer for about 15 minutes or until potatoes are tender.
  8. Mix in cheddar cheese until melted; adjust consistency with additional broth if needed.
  9. Stir in most of the bacon and season with salt and pepper before serving.
